Butterscotch Cake

  • 2/3 cup softened butter
  • 1/2 cup granulated sugar
  • 2 eggs unbeaten
  • 1 cup sifted all purpose flour
  • 1 and 1/4 teaspoons baking powder
  • 1 package Knox unflavored gelatin
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 cup butterscotch chips
  • 1/4 cup chopped pecans or walnuts

Preheat oven to 350 degrees F. Whisk sifted flour, baking powder, salt, and Knox unflavored gelatin, together; set aside. Cream softened butter and sugar. Add eggs one at a time; beat until fluffy. Add in flour mixture, alternating with milk. Add vanilla. Fold in butterscotch chips and nuts. Spray or grease and flour an 8×8 baking pan. Bake for 35 to 50 minutes (do not overbake). Cool for 15 minutes and serve. This cake is great served warm.
